Conviction
Maison Noir was born from a simple conviction: that a meal can be more than nourishment — it can be memory made tangible. Chef Émile Rousseau, trained in the kitchens of Lyon and refined in Montréal's culinary underground, returned to his Maritime roots to open Fredericton's most intimate dining experience.
Every plate tells a story of provenance. From Bellisle Creek oysters harvested at dawn to Keswick Valley lamb that arrives weekly from a small family farm, our menu is a living document — rewritten with the seasons, always honest about where it came from.
This is not a restaurant for occasions. It is a restaurant for connection — a place where time slows, conversation deepens, and dinner becomes the kind of evening you still talk about years later.
